Tea Pairing: Genmaicha Matcha-iri with Brie

During our trip to New York, we held our official US launch at Galeries Bartoux. We served 3 different tea pairings to our guests. The first, 1st flush Genmaicha Matcha-iri, by Kindred Teas, accompanied with some brie. foodpairing-04.png

Referring to the image above, the radial chart on the left represents the taste profile of the genmaicha matcha-iri on it’s own. The chart on the right represents the changes the profile goes through when tasted with brie.

This is an example of a contrasting pairing, where the high astringency of this Japanese Genmaicha Matcha-iri is balanced by the salt and fat in the brie cheese, which creates a rounded mouthfeel with a longer aftertaste.
